1.Sear the Pork Chops :Season and brown the meat.

Pat pork chops dry with paper towels and season generously on both sides with salt, pepper, and garlic powder. Heat oil or butter in a skillet over medium-high heat. Sear chops for 3 to 5 minutes per side until golden brown, then transfer to a plate.

2.Sauté Mushrooms & Aromatics :Develop savory flavors.

In the same skillet, add the sliced mushrooms and diced onion. Cook for 5 to 7 minutes until mushrooms are browned and tender. Add minced garlic and cook for 1 minute until fragrant.

3.Simmer the Creamy Sauce :Build the gravy.

Sprinkle flour over the mushrooms and stir for 1 minute to coat. Slowly pour in the broth while whisking continuously to deglaze the pan. Stir in the heavy cream and let simmer for 3 to 4 minutes until the gravy thickens slightly.

4.Smother & Rest :Combine and finish.

Return the seared pork chops and any accumulated juices to the skillet. Spoon the garlic mushroom gravy over the tops, lower heat, and cook for another 3 to 5 minutes until chops reach an internal temperature of 145°F / 63°C. Garnish with fresh chopped parsley and serve hot.

Pro-Tips & Serving Suggestions

Temperature Control: Use an instant-read thermometer to check internal heat. Pull pork chops at 145°F / 63°C followed by a 3-minute rest to ensure moist, juicy meat.

  • Searing Secret: Do not overcrowd the skillet when searing the mushrooms or chops, as this creates steam rather than achieving a deep golden crust.

  • Pairing Ideas: Serve over garlic mashed potatoes, egg noodles, steamed rice, or roasted green beans to absorb the rich mushroom gravy.
